Not browser cookies... chocolate chip cookies
By O. Wolfson
This is a half recipe for chocolate chip cookies with optional nuts and raisins —specifically "engineered" for software developers. I've reduced the sugar a bit to my personal taste (and health benefit). Best devoured with coffee. It makes about 12 cookies. You can easily double the recipe if you need more.
Prep Time: 15 minutes Cook Time: 10-12 minutes
Ingredients:
- 1/2 cup (113 g) unsalted butter (softened)
- 1/4 cup (50 g) granulated sugar
- 1/4 cup (55 g) packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (156 g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (85 g) semisweet chocolate chips
- 1/4 cup (35 g) roasted almonds (crushed, optional)
- 1/4 cup (30 g) walnuts (crushed, optional)
- 1/4 cup (40 g) raisins (optional)
Instructions:
-
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
-
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
-
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
-
Fold in the chocolate chips, crushed roasted almonds, walnuts, and raisins. Make sure everything is evenly distributed.
-
Drop dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
-
Bake for 10-12 minutes or until the edges are golden brown but the center is still soft.
-
Cool on the baking sheet for a few minutes before transferring the cookies to a wire rack to cool completely.
Enjoy your cookies with a cup of coffee.
